Bistro Piper opened its doors to the public for the first time on July 11th 2006. Previously, the Oxford Hotel had never had restaurant capabilities; therefore the inclusion of a restaurant would ensure big changes to the face of the hotel.

Ash Lyons' background is in restaurants, being a chef and restaurateur from Sydney. Bistro Piper is definitely an expression of the owner. "I've always known and enjoyed the great pub bistros in Sydney, so I wanted to run a restaurant which alleviates a lot of the formality, giving patrons a comfortable and enjoyable dining experience."

The bistro in its entirety can cater upwards of 400 people. "We offer Bathurst an A grade product for a B grade price."

The Piper Function Room has quickly become the place to hold functions in Bathurst. The Oxford Hotel's guests are provided with an amazing view of the city and has the capability to hold up to 150 guests comfortably inside and with access to an outside balcony off the function room could include a further 50 people.

"We pride ourselves on giving function guests direct access to the V.I.P room in the nightclub once their function has concluded. We can offer guests the ultimate after-party experience."

"We offer a broad spectrum of drinks; a coffee bar, huge wine selection with 60 whites, 60 reds, and cocktails to order."
